HOSP 2360 - Managing a Restaurant Business

Project Summary

This course is designed to introduce fundamentals of restaurant business with two certifications. Students learn principles of planning, purchasing, inventory systems, FIFO & LIFO, Income statement analysis, concept of menu engineering, sustainability and zero waste in restaurants.

  • To interact with Dutch students and exchange information on restaurant industry from Dutch perspective.
  • To develop a healthy menu choice for a low income demographics.
